Barbequing This Summer

I love bbq in the summer.  No need to heat up the kitchen by turning on the oven and you get an extra great flavor from the grilling and some great looking grill marks.  We're grilling chicken sometimes 3 times a week because boneless chicken is simple to get ready, grills quick and tastes great.  Put some oil on the chicken so it doesn't stick to the grill.  Add some seasoning of your choice although ours is a grill mix that you just sprinkle on and you are ready for grilling.  One dinner down!  But when dinner is over, I realize I almost never estimate appetites right and I stack up with little leftover pieces of chicken half the time and sometimes bigger pieces that still aren't enough for a family meal.  So I compile them for a few days then I chop up the leftover chicken into bite-size pieces.  Then I make a mix of Mayonnaise and salsa and mix it into the chicken.  Very popular here.  You can either serve it for another dinner on top of some salad or use it for a sandwich filling.
