Quick and Easy (and Delicious) Calzones
Spinach Calzones
Serves 4
What You Need
Pillsbury Homestyle Grand biscuits – 8 biscuits
1 tablespoon dried basil (or a handful of chopped fresh basil if in season)
8 oz prepared tomato sauce, divided
4 cloves garlic
2 C (defrosted) frozen spinach
1 cups mozzarella cheese
1/2 cup parmesan cheese
Cooking oil
Kosher salt
Beaten Egg

1. Preheat oven to 350 degrees
2. Chop the garlic

3. Squeeze all the water out of the defrosted spinach
3. Add garlic to the spinach and blend in the two cheeses and 2T or more of tomato sauce if mixture seems dry
6. Roll out each biscuit with a rolling pin to a 5” round. You may have to stretch by hand. Layout on a large cookie tray (or 2)
7. Place a heaping tablespoon or two of spinach mixture from almost one edge of a round to the middle
8. Flip over the empty side to make a half moon and seal the edge with fork tines. The sealing may go easier if fork is dipped in the egg first.
9. When all 8 calzones are sealed, use a baking brush to paint the tops of the calzones with the beaten egg
10. Gently make 2-3 slits in each calzone to let steam escape while baking
11. Bake for 12-15 minutes checking for browned top
12. Serve with warmed tomato sauce for dipping or pour over the calzones. Eat with hands if possible.
